Delicious Chana Dal Pancakes Recipe

INGREDIENTS

  • 1/2 cup chana dal, soaked and drained
  • 1/2 cup fenugreek leaves, chopped
  • 1/2 cup spinach, chopped
  • 1/2 cup carrot, grated
  • 1 tsp coconut, grated
  • 1 tsp coriander leaves, chopped pinch of mustard seeds pinch of cumin seeds
  • 1/2 tsp ginger, shredded
  • 1 tbsp lemon juice

INSTRUCTIONS

  1. Pressure cook chana dal with a little water and salt for 2 whistles. Drain and set aside
  2. Steam washed oats for 4-5 minutes. Sprinkle salt and a tsp of oil to prevent mushiness.
  3. Heat groundnut oil, add mustard, cumin, chili, curry leaves, and ginger. Add chana dal and cook until dry.
  4. Combine oats, turmeric, and fry briefly. Remove from heat, mix in lemon juice, carrot, coconut, and coriander.
  5. Shape into pancakes and fry until golden and serve hot!
