Mango Curry

INGREDIENTS

  • 14 ounce of firm tofu
  • 2 teaspoons of safflower oil
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup garam masala
  • 1/2 teaspoon salt
  • 3/4 cup red onion chopped
  • 1 inch knob of ginger
  • 3 cloves garlic
  • 1½ cups coconut milk
  • 3/4 cup ripe mango pulp or puree

INSTRUCTIONS

  1. Press tofu and cut into cubes.
  2. Sauté with spices.
  3. Blend onion, ginger, and garlic.
  4. Cook with cumin seeds, bay leaves, and cloves.
  5. Add coconut milk, mango pulp, tofu, and spices.
  6. Simmer until thickened.
  7. Garnish with cilantro and garam masala. Serve hot.
